Easy Spaghetti

MAKE IT 

Just got home after a long day and need a quick dinner fix? Throw together this super easy spaghetti from The Foodtrotter (@the.foodtrotter) and turn on your favourite feel-good movie to unwind. 

Ingredients for the tomato sauce:

5-7 tomatoes roughly chopped

1 large onion roughly chopped

A handful of chopped garlic cloves

1tbsp water

1tbsp oil

Pinch of salt

Ingredients for 🍝

1 packet spaghetti/ pasta of choice

1 tbsp oil

10- 15 garlic cloves

Herbs (oregano, thyme, rosemary)

Chilli flakes

Cheese (more the better)

1- 2 tbsp Fresh cream

Method:

Pressure cook all the ingredients for the tomato sauce, strain the excess liquid and blend to a sauce consistency.

Put your spaghetti to boil

Add the garlic and chilli flakes to hot oil. Add the tomato sauce and herbs. Mix it all and add some grated cheese and fresh cream. Sprinkle salt for taste. Add in your cooked spaghetti and mix in with the sauce. Grate some extra cheese and add extra chilli flakes and herbs if necessary. Squeeze a little bit of lemon.


EAT IT

Pair with:  a light tomato sauce like this one is best suited with a crisp Italian white such as Pinot Grigio or Vermentino 

To stick to Italian cuisine, the perfect side dish would be a fresh and quick bruschetta with some bright tomatoes and basil.
